Peach Crisp


3 unripened peaches
1-2 tbsp honey
1 teaspoon cinnamon
pinch of salt

Cut peaches into 1/2 inch slices.  Toss with honey, cinnamon, and salt. Spread evenly in the bottom of a cake pan coated with cooking spray.


1/4 cup sugar (brown if you have it.  We didn’t.)
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons chilled butter, cut into small pieces

Combine sugar, flour, and cinnamon; add butter and break up butter with fingers until mixture resembles coarse meal.
Sprinkle streusel evenly over filling.

Bake at 375 until golden brown and “crispy” looking on top.  I think it was about 30-40 minutes?  Check it at 20.
