Texan Pot Pie

This would be a rather elaborate meal to make on its own, but let’s say you made tamales.  You made chili.  Let’s also suppose you froze the extras for a rainy day

and it’s taking up valuable freezer space.  You can make Texan Pot Pie. (You could also just make chili if you were making tamales and plan for this meal, but that’s not how I run things here at Cooksmarts…)

Texan Pot Pie

1 serving (multiply as needed)

1 serving chili
1 tamale rough chopped
1/2 ounce – 1 ounce of cheese, shredded
jalapeno, small dice, for garnish

Preheat oven to 375. Place chili in the bottom of a casserole dish.  Chop tamales, toss with cheese, sprinkle on top of chili.  Bake until the cheese and tamales are golden bubbly delicious. Garnish with jalapeno.
